Changing specific icons in Linux is very difficult and it may not work.
I do not recommend it. It's way too much work, it will take a huge amount of time.
So always backup the original icon if something goes wrong.

First find where your icon theme is.
Let's say it's /usr/share/icons/Mint-Y

Now you have to locate the icon you want.
Each icon has multiple versions with different sizes, and you have to replace them all.
This is a big guessing game.

The one on the System Tray is an applet.
There is information about it in /usr/share/cinnamon/applets/favorites@cinnamon.org
In metadata.json it says: "icon": "xapp-favorites-app"

So you start looking in the Mint-Y folder for any file named xapp-favorites-app.
There isn't any!
Where to go from there...
I think they are named differently...

For the icon in Nemo, it should be a "Places" icon.
So I believe the icon is /usr/share/icons/Mint-Y/places/symbolic/xapp-user-favorites-symbolic.svg
But this is actually a LINK to another icon in the same folder: user-bookmarks-symbolic.svg
So you would replace that.

Every time you replace something, press Ctrl+Alt+Esc to restart Cinnamon to see if it worked.
And write down everything you did, every file name / path, backup everything.

This is the way to change the icon style, but sometimes you may also want to change individual icons. This is not a problem.
Right-click >Properties in the menu for the relevant program and then click on the icon in the small window. You can then select a different one.
