I have bound `Alt+§` to minimize windows. It seems to work. Sometimes. And sometimes it just stops working, and instead open some weird window switch menu? See the image below.

why are you trying to duplicate a feature that is already present in Mint?
use SuperKey ( Windows key ) + D
that causes all windows to collapse, and using it again, opens them back up like they were.
BUT,
you failed to show us what OS you are using, look at the top of the screen, see that Pink Band,
read it, and show us what you have.

I'm talking about using the keybinding "Minimize window", and you're talking about the feature "Show desktop". They're two completely different things.

The keybinding to activate the window menu is alt+space, and n is the menu shortcut for Minimize to the desktop. If that is not the result you want, try alt+space+x. alt+space+m will maximize an active window.
You can assign another key combination from System Settings → Keyboard → Shortcuts → Windows.

I should perhaps have added a bit more detail to my answer. I have in Settings / Keyboard / Shortcuts / Windows, bound the feature "Minimize window" to the key Alt+§. It works, until it stops working. It's called the `section` key. It's the first key on the number row on ISO keyboards. If I recall correctly.
