Boot from ubuntu mini iso and go for a mini (CLI) installation.
Reboot.
Add any extra mint repositories.
Prevent apt from pulling-in recommended and suggested packages.
Update - upgrade.
Get ready for some dependencies hunting.
Install mint-specific packages that you like or DE's that you want trimmed down.
