Chrome on linux
Does any one know of a way to force Chrome to use it's assigned theme for menu bg and text colours instead of using the GTK theme?

No.
You can create your own themes, but I don't think you can apply them to the dropdown menus.

Uncheck "Use system title bar and borders" in Chrome - Settings - Appearance et voilà.
