I see that VLC and Banshee are listed in the volume indicator
How do I remove or add items to that "sound settings menu" (if that is what its called)?

My bad... I didn't realise/know that Xfce also used the DConf db for storing desktop settings
I used the gsettings set com.canonical.indicator.sound to blacklist what I didn't want and then added my player app to the whitelist
For those who want a 'simpler' solution, install dconf-tools and then run dconf-editor
Click your way to com >> canonical >> indicator >> sound and it should be pretty self-explantory from that point onwards....
