You can't. The applet is only for giving an overview of the calendar.

As @Cosmo said, Cinnamon’s calendar applet is stripped down from any events functionality altogether, see https://github.com/linuxmint/Cinnamon/issues/2720.
The only way to have it back for now is to make up a panel launcher for your preferred panel application

I don't use Evolution.
If the events get stored it in a proprietary format you will most likely open them only with evolution. If they get stored in ICS-format, you can use other programs, which can read them.
