When I click Menu, on the left most side, there are icons. Logout, Quit, Settings, Terminal, Firefox, Software Manager, etc...
How do I change them? For example, I use Chrome - so I'd rather Chrome be one of those quick-access icons.

Find the application you want to remove in the right side of the menu. Right-click it and select to remove it from favourites. Similarly, you can add applications to favourites.

The favorites can also be removed by simply dragging them with the mouse a little bit to the right. With this method also new favorites can be added (dragging from the menu to the favorites bar).

Only by replacing the build-in menu applet with another one, which does allow or does exclude that. Search here.
